Cissy’s favorite recipe for mandazis, an East African donut

Cissy Nantume from Classic Africa Safaris, shared her go-to recipe for mandazis, an East African donut which is often enjoyed with tea in Uganda.


  • 420g of all purpose flour
  • 150g of sugar
  • half tsp baking powder
  • 1 tbsp lemon rind
  • 1 tbsp cardamon powder or cinnamon powder
  • half tsp salt
  • 100g butter/margarine
  • 1 egg
  • 1 tbsp vanilla essence
  • 110ml warm milk
  • enough cooking oil for deep frying


  1. Dissolve sugar in milk.
  2. Mix rest of dry ingredients.
  3. Add beaten egg, milk and vanilla essence.
  4. Knead dough until firm.
  5. Roll out dough on flat surface.
  6. Cut out desired shapes.
  7. Deep fry until golden brown.
